Heating and cooking:
The innovative process allows quick heating of small mix quantities (up to 20% of max capacity) without burning or sticking. It ensures fine texture and accuracy, even with delicate ingredients like pastry cream. Each cycle heats only the mix to be batch frozen, enhancing quality and customization for each gelato flavor.

TANK:
This "technological pot" has a large bottom surface for optimized thermal exchange, preventing burning or sticking. It features a patented counter-stirrer, and a uniform scraping system that is easy to disassemble and clean.

COOKING:
The machine boasts rapid performance, precise temperature control, and reduced thermal inertia, even with dense products. This is achieved through features such as:

  • Double- and triple-resistance heating devices (for Multy P 12 TTi) governed by a PLC, allowing individual, alternating, or simultaneous operation.
  • Three probes for accurate temperature monitoring and reduced thermal inertia.
  • Uniform heating across 20% to 100% of the tank's maximum capacity.
  • Cooking temperatures up to 125°C.

LID:
The double lid features an opening system powered by servo-assisted hydraulic pistons for easy ingredient introduction, even during ongoing processes. This allows the machine to operate continuously while complying with certified EC safety regulations.

TAP:
The wide-diameter tap (4 cm) ensures direct outgoing of products to the cooling cylinder, handling even dense mixtures, with a maximum of 15 seconds for 7 kg.

  • It is easy to dismount and sanitize.
  • Made entirely of 18/10 stainless steel for durability and dishwasher-safe cleaning.
  • Features a servo-assisted gradual opening system to prevent jerky movements and squirts.
  • The tap rotates up to 180°, allowing independent operation of the heating tank from the cooling cylinder.
  • Meets EC-certified accident prevention and safety measures.

Versatility:
Heating and/or cooking procedures allow product outgoing directly from the heating cylinder independently from the batch freezing cylinder. It features an anti-squirt system during pouring and batch freezer operation with a liquid mix. Additionally, it includes a shelf space for hot product output, independent of the cooling cylinder.

VAlMAR Combisystem:
Cooling improvements with the new Valmar COMBISYSTEM® have been integrated into the Multi P cooling and batch freezing systems. The customizable software now caters to the specific cooling needs of confectionery, pastry, ice-cream, and foodservice products. The COMBISYSTEM® enhances batch freezing quality, producing creamy gelato that is more resistant to melting with an overrun of up to 40% of mix weight. Air incorporation keeps the gelato creamy and soft.

GELATO OUTPUT:
The new output process features automatic stirrer speed adjustment. The speed varies progressively and prevents gelato from melting during the entire outgoing process. This customizable speed progression is especially practical for variegated gelato production.
