VALMAR Combisystem

With the innovative VALMAR Combisystem, gelato is now more resistant to melting, achieving up to 40% overrun and maintaining a creamy, soft texture. The gelato output process features leading technological advancements, including automatic, progressive stirrer rotation speed, which simplifies topping procedures and the addition of extra ingredients.

The software is an integrated digital and analog system designed to automatically manage all the programs via a PLC.

Touch & Type

The user can operate the machine in Touch mode or traditional Type mode. The 4.3” LCD touchscreen features clear and intuitive icons to manage and monitor each phase.

INverter that allows for automatic speed adjustment

Inverter

Stirrer rotation inverter ranges from 5 to 70 Hertz, allowing for various products to be produced efficiently. The PLC and inverter enable perfect batch freezing based on quantities, mix features, ingredients, and formulation. This new feature allows for automatic speed adjustment of the outgoing gelato to prevent melting during the process

Cylinder

Cylinder Design

The cylinder is designed and tested to ensure optimal chilling performance, freezing speed, micro-crystallization, and air incorporation.

Stirrer

Stirrer®

A special helicoidal stirrer with variable convergence blades and high-performance scrapers ensures uniform gelato spreading on the cylinder surface, preventing excessive freezing on blades or in the cylinder's middle.

Scrapers

SCRAPERS®

The high heat rate efficiency and significant energy savings of the cylinder surface are due to the materials used for the scrapers, their special inclination at the touch point, and the specific high-thrust spring. The scrapers, made of EC-certified materials for food handling equipment, ensure effective scraping and optimal performance.

Check of Gelato Consistency

Consistency is checked through stirrer torque measurement in Nm, gas temperature, and gelato inside the cylinder, ensuring the desired texture regardless of the recipe.

Direct expansion System

Direct Expansion System

The refrigerant gas direct expansion system on the batch freezing hollowed spiral cylinder, with progressively variable diameter, optimizes chilling performance across the entire cylinder surface.

Easy product Output

Easy Product Output

The START & STOP button-operated automatic gelato output is crucial for creating flavors that appeal to your customers. It allows the operator to reduce or increase the stirrer revolutions, modifying the speed of product output and providing enough time to decorate the tub in progress.

Heating

HEATING

Bain-marie heating with continuous blending of the liquids. This, together with the PLC-controlled resistance heating devices, gives fine-texture and accuracy in production even at the 30% of the machine production rates, without burning the mix or the machine side panels.

Cooling

COOLING

Bain-marie cooling guarantees temperature uniformity in the whole tank and avoids ice formation on the tank bottom, mainly in case of small mix quantities, up to 30% of its max capacity.

Double Washing System

WASHING

Automatic double washing system of both the tank and the tap.

ENERGY EFFICIENT

TTi series batch freezers save about 30% in water and energy compared to standard models. Innovative cooling systems and optimized cylinder dimensions enhance thermal exchange, reducing batch freezing time and boosting efficiency. Also available in air-cooled, single-phase versions.
