BATCH FREEZING:
Simply vertical batch freezing stirs the mix centrifugally and vertically, resulting in gelato that's easy to work with a spatula and more resistant to melting. This method adapts well to any artisan gelato production model.
STIRRER:
The special stirrer design, made entirely of stainless steel, features self-adjustable MOP scrapers certified for food use. Its steady scraping action ensures highly efficient heat exchange between the gelato and refrigerant gas.
MINIMAL RESIDUES:
The stirrer's unique design, with three helicoidal arms and centrifugal and vertical stirring, produces gelato with perfect texture and minimal residues at the end of the batch freezing process, enhancing resistance to melting.
PRODUCTION RATE FLEXIBILITY:
The machine allows for production rate reduction to 1/3 of its maximum capacity, maintaining perfect gelato texture while saving time and energy proportionally.
ROTATION:
The stirrer maintains consistent rotation direction during batch freezing (normal speed) and product output (high speed), ensuring a long lifecycle for the machine components.
